Summer Soup!!

What the hell is up with the crazy 100 degree whether in the Cit? (city) I think my face has actually melted into my neck a few times.
Ahhhhh, who am I kidding? I look fantastic…even in this heat!
FIN has been super slow lately.
Its that dull time of year where everyone heads to the Hamptons or blazes off to some remote wooded camp up north.
NYC is a ghost town when it comes to the dead of July.
It might be the smell of hot garbage that cues everyone to make a mass exodus.
I happen to like it when the city clears out.
I feel like a hard core metropolis girl on a set of some post apocalyptic movie.
But I digress….
SUMMER SOUP!!!

WATERMELON GAZPACHO

This cool summer buster is sure to hit the hot spot!

  • 1 3-pound seedless watermelon, diced (about 5 cups), divided
  • 1 small cucumber, peeled, seeded, diced (about 1 cup)
  • 1 medium-size red bell pepper, seeded, diced (about 1 cup)
  • 1 medium-size yellow bell pepper, seeded, diced (about 1 cup)
  • 1 small jalapeño chile, seeded, minced
  • 3 pale green inner celery stalks, diced (about 1/2 cup)
  • 1/2 small red onion, diced (about 1 cup)
  • 1/4 cup finely chopped fresh mint
  • 3 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
This is the quick part.
LOOK MA, NO STOVE!!!!!!
Just puree 3/4 of the diced Watermelon add all of your ingredients to the puree, then add the remaining chunks of watermelon and HOLY SHIT! You’ve got yourself an amazing bowl of cool spicy goodness.
Suck on that!!!
